Vinification:

  • Total destemming
  • Gentle pressing and decantation
  • Fermentation at 16°C for 15 days (70% in stainless steel + 30% in French oak)

Aging: 4 months on the lees with bâtonnage. (70% in stainless steel + 30% in 3rd-year French oak)

Tasting Notes: Clear and citrus in color. Very expressive and elegant aroma, with white flowers, fresh cantaloupe, and a hint of vanilla. Good volume on the palate, but very fresh, mineral, and complex. Pairs well with salmon, cod, chicken, and turkey.
