Upon arrival at the winery, grapes from century-old vines are carefully selected and destemmed. A pre-fermentation maceration at low temperature with robotic foot treading in stainless steel "laggares" follows, followed by fermentation at controlled temperature in stainless steel tanks. Pumping over and delestage processes are then performed to achieve maximum extraction, with a meticulous selection limited to the chosen components, followed by a long post-fermentation maceration.Aging:
Aged in French oak barrels of 225 and 300 liters for 18 months. 70% in new barrels and 30% in barrels of the second and third year.Tasting notes:
Intense red color. Very intense and complex aroma dominated by ripe black fruits, blackberry, blackcurrant, and gooseberry, with floral notes of violet and exotic wood. Spice aromas emerge from the barrel aging. All these aspects contribute to excellent aromatic complexity that will continue to develop over time. Well-balanced acidity with firm, ripe tannins. These characteristics make it a full-bodied and powerful wine with a long, persistent finish.
